Ingredients:
- 1-2 large tomatoes
- 1 can whole kernel corn
- 1 can black beans
- 1 small red onion
- 1 lime
- 1 tablespoon olive oil
- 1-2 tbsp fresh cilantro
- salt & pepper, to taste
- 1 jalapeno (optional; leave this out if you don’t care for spicy)
Directions:
- (Preparation) Dice tomatoes and drain away as much juice and seeds as possible. Open and drain well both canned items. Using a fine collinder, rinse the black beans and pat dry with a paper towel. Roughly chop the red onion and jalapeno. Roll out the lime until the fruit is less firm and cut in half. Finely chop fresh cilantro.
- (Mix) Add tomatoes, corn, black beans, and red onion in to a large mixing bowl. Drizzle olive oil over top and mix with a spatula to coat. Squeeze lime over bowl to extract juice. Add cilantro, salt, pepper, and jalapeno. Mix one last time until everything is combined.
- (Serve) There are so many options! You can eat the salsa the classic way; with chips as a dip! You could use it as a topping in a taco with your choice of seasoned meat and wrapped in a tortilla with cheese. Finally, you can place a heaping spoonful on top of your choice of salad.
