Ingredients:

  • 1-2 large tomatoes
  • 1 can whole kernel corn
  • 1 can black beans
  • 1 small red onion
  • 1 lime
  • 1 tablespoon olive oil
  • 1-2 tbsp fresh cilantro
  • salt & pepper, to taste
  • 1 jalapeno (optional; leave this out if you don’t care for spicy)

Directions:

  1. (Preparation) Dice tomatoes and drain away as much juice and seeds as possible. Open and drain well both canned items. Using a fine collinder, rinse the black beans and pat dry with a paper towel. Roughly chop the red onion and jalapeno. Roll out the lime until the fruit is less firm and cut in half. Finely chop fresh cilantro.
  2. (Mix) Add tomatoes, corn, black beans, and red onion in to a large mixing bowl. Drizzle olive oil over top and mix with a spatula to coat. Squeeze lime over bowl to extract juice. Add cilantro, salt, pepper, and jalapeno. Mix one last time until everything is combined.
  3. (Serve) There are so many options! You can eat the salsa the classic way; with chips as a dip! You could use it as a topping in a taco with your choice of seasoned meat and wrapped in a tortilla with cheese. Finally, you can place a heaping spoonful on top of your choice of salad.
