Tiring of turkey already? Perhaps you need to spice it up!
All those Thanksgiving leftovers donโt have to mean turkey sandwiches for a week or wasted meat; here are just a couple of ways to keep dinner interesting, even if it is turkey again. Spicy Turkey Soup โ to warm you up in the Southern Maryland winter weather
Ingredients:
ยผ onion, diced; 2 cloves garlic, chopped; 1 chili, chopped; 2 tbsp olive oil; as much diced turkey as you have or wish; pinch of ground dried ginger; dash of cayenne pepper; ยผ broccoli head, chopped; ยผ red pepper, diced;1 chicken bullion cube; 290ml/ยฝ pint boiling water
To garnish:
2 tbsp rice, cooked; 55ml/2fl oz double cream; handful of chopped parsley
Method:
1. Fry the onion, garlic and chilli in the olive oil for 3-4 minutes until soft.
2. Add the turkey and fry for 2-3 minutes.
3. Add the stock cube, dissolved in the boiling water, and all the other soup ingredients, and simmer for 8-10 minutes.
4. Stir in the rice, cream and parsley and serve.
Turkey Meatballs
Ingredients:
For the meatballs:
1 tbsp olive oil; 1 medium onion, chopped; 40g/1ยฝoz white breadcrumbs; 50ml/2fl oz milk; 250g/9oz minced turkey; 1 small apple, peeled and grated; 1 tsp fresh thyme leaves; ยฝ tsp salt and freshly ground black pepper; 1 tsp Old Bay or seafood seasoning; 1 tbsp flour, for dusting; 2 tbsp sunflower oil
For the tomato sauce (or just use a jar of your favorite tomato sauce if pressed for time):
1 tbsp olive oil; 1 medium onion, chopped; 1 clove garlic, crushed; 400g/14oz tin chopped tomatoes; 100ml/3ยฝfl oz water;1 tbsp tomato concentrate paste; 2 tsp sugar; ยผ tsp dried oregano; pinch dried chilli flakes; salt and freshly ground black pepper
To serve:
250g/9oz dried spaghetti; chopped fresh parsley or basil
Method:
1. For the meatballs, heat the oil in a pan and fry the onion for about 10 minutes until softened.
2. Meanwhile, soak the breadcrumbs in the milk for 10 minutes in a large bowl.
3. For the sauce, heat the oil in a pan and fry the onion for about 10 minutes until softened. Add the crushed garlic and sautรฉ for one minute.
4. Add all the remaining ingredients and simmer, covered, for seven minutes.
5. For the meatballs, add the turkey mince, grated apple, thyme, sautรฉed onions, salt and freshly ground black pepper to the soaked breadcrumbs and mix together.
Using floured hands, form teaspoons of the turkey mixture into small balls.
6. Heat the sunflower oil in a frying pan and brown the meatballs. Transfer the meatballs to the pan of tomato sauce and simmer, uncovered, for 8-10 minutes.
