I was casually paging through a recipe magazine published through the Commissary in Naples (in English) and I came upon two really intriguing recipes. I thought I might like to try them both and then I had an even better idea; I thought they would make a good combination! So, hereโ€™s my version which Iโ€™ll callย Chicken and Raspberries with Couscous.

Chicken And Raspberries with Couscous

Serves 4

Ingredients:

4 chicken breasts, cooked, cooled, and cut up into cubes or slices

2 cups couscous, prepared according to package directions

2 cups raspberries (or blackberries, or strawberries)

1/2 cup sliced green onions

ยฝ cup toasted walnuts

ยฝ cup Feta cheese, crumbled

ย 

For Dressing:

1 cup sour cream

ยผ cup wine vinegar
