A little bit of โ€œsouth of the borderโ€ has come to North Calvert County. On Saturday, Feb. 16, several elected officials joined with the owners of Plaza Mexico Restaurant in North Beach for a ribbon cutting ceremony. According to North Beach Mayor Mark Frazer, the most asked question in town for the past several weeks has been โ€œWhen is Mexico opening?โ€

The eatery is located at 9200 Bay Avenue.

The restaurant, which serves authentic Mexican food, is the fifth such venture for Benigno Ayala, who said he opened his first restaurant in Waldorf 11 years ago. Another restaurant was opened in Calvert County on Route 2/4 in Huntingtown almost a decade ago.

Earlier this month Plaza Mexico held a โ€œsoft opening.โ€ Frazer told the ceremony gathering โ€œit was the hardest soft opening ever.โ€

Ayala stated his restaurants are renowned for their fajitas and arrozcon mariscos, a seafood dish consisting of grilled shrimp and scallops served over rice.

In addition to Frazer, elected officials attending the ribbon cutting at Plaza Mexico were Maryland Senate President Thomas V. Mike Miller Jr. [D-District 27], Calvert County Commissionersโ€™ President Pat Nutter [R], County Commissioner Susan Shaw [R], North Beach Council Vice President Gregory Dotson, North Beach Councilmembers Randy Hummel, Gwen Schiada, Mike Benton and Ken Wilcox; and Chesapeake Beach Town Council Vice President Patrick J. โ€œIrishโ€ Mahoney.
